scrimpySnack of the Week: Cinnamon Bread

Good Sunday Afternoon, people! I just made Cinnamon Bread, and I'll tell you...It's not too sweet, not too spicy, not too anything. It's a nice compliment to a cup of coffee or tea. I found the recipe on allrecipes.com.

This weekend, we're a little holed up watching NCAA games and chilling with the baby. Tonight, my girlfriend, Crystal is coming over for pasta and sauce, and she just called saying she's bringing some wine and bread, too. What a good friend!

Here's the recipe, this would also be good as muffins:


Cinnamon Bread
12 slices

2 c. all purpose flour ($.30)
1 c. sugar ($.31)
2 t. baking soda ($.02)
1/2 t. baking powder ($.02)
1 1/2 t. cinnamon ($.09)
1 t. salt (<$.01)
1 c. soy milk (organic - $.37)
1 T. apple cider vinegar ($.05)
1/4 c. vegetable oil ($.22)
2 eggs (organic - $.60)
2 t. vanilla extract ($.32)
1 T. white sugar ($.02)
1 T. brown sugar ($.04)
1 t. cinnamon ($.06)
2 t. butter ($.06)

Total: $2.49, that's $.21/slice...that's a lot less than you'd pay at Starbuck's.

  1. Preheat oven to 350. Grease a loaf pan or muffin tin.
  2. Combine flour, baking soda, baking powder, salt, 1 1/2 t. cinnamon.
  3. Combine soymilk and vinegar. Let it sit for 5 minutes.
  4. Combine soymilk mixture, eggs, vanilla, and sugar.
  5. Add dry ingredients to wet and mix until *just* combined.
  6. Pour into prepared dish.
  7. Cut together 2 t. butter, 1 t. cinnamon, and 1 T. each of brown and white sugars, until they are crumbly.
  8. Sprinkle the sugar topping over the top.
  9. Bake at 350 for 50-60 minutes.
  10. Let cool, slice up, wrap in plastic or foil, and you're good to go on snacks for the whole week!


scrimpyTips:

- I surmise this would be delicious with half whole wheat flour, also, but haven't tried it.

- This would be great with some chocolate chips or nuts in it, too!
